As a vegetarian, finding truly satisfying sandwiches can be challenging, but The Solar Fusion is exceptional! The combination of flavors is so well-balanced, and the halloumi has such a wonderful texture. This is easily the best vegetarian sandwich I've had in years.
Being Greek, I'm very particular about how halloumi is prepared, and I was impressed by this sandwich! The cheese is grilled perfectly, and the combination with the eggplant and pesto is delicious. My only criticism is that the focaccia could be a bit lighter, but overall it's excellent.
The flavors in this sandwich are good, but I found it a bit too oily for my taste. The halloumi was delicious and I loved the sun-dried tomatoes, but the combination of the olive oil in the focaccia, the oil from the pesto, and the natural oils from the cheese made it quite heavy.
